What I Eat in a Day/ What Paleo Is

I’m very vocal about the importance of taking care of your mental and physical health. I think they come hand in hand. As you get older, you probably realize how late nights affect you more now than they might have when you were in high school, or how drinking 4 shots of espresso at 7 PM will make you totally wired at 9 PM. I used to care a lot less about staying out late or drinking too much coffee, but I’m more in tune with my body now than I used to be so I know what I have to do to make sure I don’t feel unwell.

Most of us don’t have personal chefs or prepped meals to eat after school or work, so I figured I’d explain how I stay balanced as an entrepreneur/ avid traveler.

I’ve been following a predominantly paleo diet since my modeling days. I went vegan for 2 years when I was 14 and it was the worst decision I’ve made in my entire life. I never felt sicker and heavier than when I was vegan. I probably followed the diet all wrong and spent too many hours running on the treadmill instead of lifting weights (you’ll notice such a big difference in your body if you ditch all that cardio and try lifting) but when I transferred to paleo I instantly lost some weight and overall felt healthier. Now that I don’t model and don’t care about my weight, I follow paleo as much as I can because it’s really the best diet for my body type and the amount of physical activity I partake in. It’s also really easy because every single restaurant, store or coffee shop will most likely offer a protein or vegetable.

 My normal meal routine when I’m in LA / Connecticut is below, but I’d say I eat out about 4-5 times a week. I try not to eat out but if I’m in meetings, or not near a fridge to put my meal prepped food in, then I suck it up and eat out. I bought this set of meal prepping containers last year for $16 on Amazon. I hate buying food at the airport so I always meal prep before a flight so that I can eat clean when I’m traveling. I make a habit of always prepping my meals for the week on a Sunday, taking into account how many days that week I expect to eat out, and consciously trying to stick to my meals during the week. Since I work a lot I enjoy having food already ready when I get home so I can just eat my dinner and fast forward to dessert, ya know?

I go to Trader Joe’s / Whole Foods on Sunday or Saturday to buy food for the week. If I’m busy I’ll use Instacart so that I can just get right to the prepping and skip the shopping, but I love being in a grocery store when I can! This isn’t what I eat everyday, but it’s a rough idea of the kind of food I always keep in my fridge and how I like to eat when I’m prepping my meals.

My breakfast during the week:

When I first wake up, I always make a cup of coffee in my Keurig. I put cinnamon, 1 teaspoon of vanilla ghee, 1 teaspoon of maple syrup and some hazelnut flavored almond milk in it.

After that, I’ll have a protein shake with 1 frozen banana, ice cubes, 1 teaspoon of peanut butter, unsweetened almond milk and Vega or Tera’s Whey protein powder. Or, I’ll eat a banana/ Redd bar before or after the gym and that will usually hold me over until I get to my office where I’ll have some more free black coffee because that’s really why I have an office at WeWork, duh. I’ve been skipping breakfast more lately because I seem to be slammed with something at the beginning of every day lately, but I really do like my morning protein shake and it helps me spend less money on snacking. 

On the weekends, I sometimes have paleo pancakes (I like the Birch Benders mix) with lots of maple syrup, grass fed butter or ghee and peanut butter. Butter is NOT bad for you if you can buy organic butter instead of crappy butter. It’s worth the $2 up charge. I like Vital Farms or Kerrygold. If I wake up late, I’ll have lunch and skip breakfast but always have coffee in the morning. Usually I go out to brunch or lunch with friends on Saturday or Sunday, so I might be eating a salad or a fried chicken sandwich depending on where we go.

My lunch during the week: 

I’ve been on a cauliflower rice / sweet potato noodle kick. Last week when I was in LA I meal prepped a paleo sweet potato noodle stir-fry that I distribute in my meal prep containers with a serving of the stir-fry, along with some trail mix and 1 piece of chocolate for my lunch. Unless I’ve run out of chocolate, I always have chocolate during lunch because I find it curbs my obsession (I’m obsessed with chocolate) and I’m less likely to eat 15 Justin’s peanut butter cups if I have chocolate throughout the day.

I air fry organic chicken from Trader Joe’s, put that in a saucepan with some greens, broccoli, onions and red peppers and I make a sauce with peanut butter, soy sauce and honey, fry it all up with the “noodles” and have that for my lunch/ dinner during the week. Sometimes I’ll make a similar stir-fry with chicken and use cauliflower rice instead of noodles. Both are super cheap, easy to find in grocery stores and delicious! I’ll bring an apple or buy some popcorn at my office to have in the afternoon. 

I try and switch up the protein that I eat, so I’ll meal prep 2-3 pieces of organic salmon with broccoli and have that for half the meals and a stir-fry dish for the other half. Buying salmon irritates me because it’s the most expensive protein on the market, but I know eating meat for every meal isn’t necessarily the healthiest thing so I make the investment. The most important rule when it comes to meal prepping is to avoid getting bored of your meals. Variety is key.

If I’m on the go and don’t bring lunch with me, I either have a chicken salad with avocado from Mendocino Farms which is next to my office or a really delicious pesto chicken salad from Olive & Thyme (a cafe by my recording studio in Burbank). I rarely find myself far enough from either place so those are my go-to meals. If I’m traveling, I always try and find a Whole Foods to eat lunch at because I know I can get something that’s clean, healthy and filling.

For dinner: 

I’ve been on a major cauliflower gnocchi kick (stock up at Trader Joe’s: it’s gnocchi made with cauliflower instead of potatoes, and it tastes just as good) so I’ll make that for dinner with pesto and some butter along with some type of vegetable for an easy weeknight meal. I always keep Trader Joe’s cauliflower pizza (it’s cheaper than my favorite brand, Against All Grain) in my freezer just in case. I love using my air fryer, so I like frying the gnocchi and putting butter on at the end. If I have friends over, I almost always make gluten-free pasta with goat cheese, lemon and chicken because I unfortunately can’t get all of my friends eating sweet potato noodles or cauliflower rice.

 I eat chicken or salmon every night for dinner. I do not like tofu or alternative protein sources. I do not like eating Beyond Meat burgers because I cannot even begin to compare fake meat to Shake Shack, sorry. If I’m eating out or at a happy hour, I’ll opt for something on the menu like a protein with a salad, oysters, a glass of red wine or French fries with mayo. 

Another meal I find myself making more nowadays is tuna salad on arugula. I’ll buy organic canned tuna, mix it with Sir Kensington’s mayo, some dijon mustard, tahini, cranberries, celery and avocado and top it on greens instead of bread. I’m OBSESSED.

I’m a HUGE dessert person, so if I can get home from work early enough (before 7 PM) to have dessert after dinner before going to bed, I’ll have peanut butter Halo Top with extra peanut butter (I love Brandless peanut butter), Enjoy Life dark chocolate chips and banana.

Eating healthy is very easy and affordable as long as you allot extra time every week to making your meals! It sounds intimidating but I promise meal prepping becomes fun, and you don’t have to be a good cook to make these meals. You’ll need a sheet pan, some olive oil, and your imagination to get creative in the kitchen and feel inspired to eat healthy. If following paleo doesn’t work for you, then you can totally take elements of a paleo lifestyle and apply them to your life. Like eating more nuts, healthy fats and dark chocolate while still eating grains sounds great to me.

As my career has progressed, I’ve certainly started noticing how things like getting my nails done and getting a spray tan change my personal opinion of myself, in a good way. I feel more confident on TV when I’m tan, and I have no reason to deny that. When Brittney spray tanned me at my apartment over 1 year ago, I knew she was destined for success. Since tanning me in my apartment, she’s opened a full service salon in West Hollywood, that’s frequented by girls like Lauren Elizabeth & Delilah Belle.

I think there is something incredibly special about entrepreneurs who are SO open about their trial and error. Instead of ignoring what I like to call the “come up” AKA all of the late nights, tearful car rides and utter frustration, a select group of entrepreneurs are not only willing but beyond happy to explain their journey from the beginning. I guarantee you that EVERY SINGLE person you aspire to be like has come from a background that isn’t necessarily straightforward, and being a little more vulnerable about your journey to success will in return inspire even more people around you.

And isn’t that the main goal of being an entrepreneur, to inspire?

Fearless Everyday with Marsai Martin

Marsai Martin is the guest on my show #FearlessEveryday on Radio Disney this week! She stopped by the studio a few weeks ago, and I seriously could not believe she was only 14-years-old. The entertainment industry definitely makes you grow up quicker than if you weren’t working in this world, but Marsai’s fearless and confident perspective on life is quite unique for someone her age. Plus, she showed up to our interview in sweatpants. Seriously, what screams confident more than a cool and comfortable look?

A Word on Ethics

If you’re in LA, you might have caught me on Good Day LA this morning! I had the opportunity to host a body positive segment on the topic of spring style, which is always fun because I get to work with beautiful models and talk about what being confident means to me. I try to be as honest and authentic as I can with you guys because authenticity is incredibly important to me, so when I say there is so much stuff that goes on behind the scenes of any segment, I’m not kidding! Between booking models, hair and makeup, making sure clothing arrives, actually arriving and setting up…sometimes I feel like taking a 24 hour nap after a TV segment! I powered through the day and am at my WeWork office now before I go home and pack for my flight tomorrow to Boston to spend Easter with my parents on the East Coast. Carrot cake, I’m comin’ for ya!

The clothing I featured in the Good Day LA segment was from Lola Getts, a fabulous activewear brand that’s nothing but affordable and versatile. Though I definitely don’t consider myself a major fashionista anymore (I love dressing up, but now I just think of it as another part of my job!) I do take pride in making sure whoever I’m working with feels happy and confident. My team and I managed to make all of the models in the segment feel comfortable wearing activewear on TV. We put a few of the girls in dresses and pants that you could wear to the gym OR to a meeting, which is what I usually do since I’m constantly on the go. There’s nothing better than spending $100 at a store and walking away with 10 + outfits. I may be successful, but that doesn’t mean I’m not saving money to put everything back into my business. Huge shoutout to Lola Getts for supplying these beautiful outfits!

The business world is a crazy world to be in. During my podcast episode that aired earlier today, I discussed a few ways to save money and also walk away from any opportunity feeling satisfied and comfortable with how much money is in your bank account, even if you have to sacrifice a lunch or a coffee with some friends so that you can save a little extra this week! My Dream Come True!

Today marks the ONE MONTH (!) anniversary of the Be Fearless Summit! Can you believe the summit was 1 month ago from today? Time is flying by. Especially when you work on one project for what feels like forever, and then it’s over with and you feel like it was over quicker than it started! I’m excited to release the official reel from the summit, available to watch on my IGTV and YouTube. This video was shot throughout the day at the summit, and truly showcases every part of the summit I worked so hard to make as perfect as could be. From the catered lunch from Shake Shack, to speakers who flew in from companies like Hulu and Comcast, I hope the passion I have for young people and getting out of your comfort zone is obvious through this video.

Be Your Own Girl Boss with Justice

You guys know how much I love a #GirlBoss. The definition of a Girl Boss, for those of you who don’t know is someone who truly empowers confidence and creativity, usually an equal mix of both to change the world! Growing up, I shopped at Justice all the time. Whether I was at the mall for a shopping trip with my mom, or a girls trip during my junior high school days, stopping in Justice was just as expected as grabbing some Pinkberry. Since I’m a little too big for Justice clothing now (even though I still buy & wear their accessories, as pictured above) they’ve recently released a series of graphic novels by author Julia DeVillers called Ultra Squad. Justice mailed me a few copies of the adorable books with lots of fun and eye-catching photos, and I instantly fell in love!

You’re totally never too old to buy from the kids’ aisle or read a graphic novel! The newest book in the series, Ultra Squad: Under the Strangebow came out March 24th, and certainly showcases everything tweens should be viewing, like size-inclusive models and girl power. You can buy the books directly in stores for $8 each along with some super cute Ultra Squad accessories and clothing. I’m digging the bracelets above, they match my dresses and my jeans! Plus, whenever you look down at your wrist you’re instantly reminded how fantastic you are with one of the motivational sayings on the bracelet. Don’t forget to bring your notebook to school with you or on your way to grab tea or coffee in the morning, you never know when you might have an idea about how to be your own #GirlBoss that you might want to jot down!

Why I Made A Conscious Effort to Not Go to Coachella

When I moved to LA from Boston, I was so shocked at how many people live and breathe waiting for the week of April 12th. If you aren’t familiar with Coachella, it’s a massive music festival filled with tons of insane events that are disgustingly hard to gain entrance into unless you’re very connected, and performers that I don’t entirely know people actually listen to when they’re performing since everyone is so caught up in the hype of being in the desert. The lineup is usually pretty dope, which attracts people who like alternative, to rap, to EDM to every other form of music available. It’s held in Palm Springs, which is a few hours from LA and quite a nice drive. I love music festivals and I’m connected to many different people in the industry, so when my friend asked me to go to Coachella last year I was down to see what the festival was all about. I got Mazda to give us a free car, and we headed out to the desert.

I love music and I love music festivals. I love Governor’s Ball which is in NYC every year, ULTRA, any party with music in Ibiza, and Boston Calling. But none of these festivals live up to the Instagram culture like Coachella. It’s one of those events that you feel slightly unworthy and useless if you don’t have the connections to get you there so you can’t go. I totally get that, and that’s why I wanted to go last year and see whether it was worth the hours in traffic and the freezing cold April nights in Palm Springs. Plot twist: it was not!

Here’s the thing: we all suffer with FOMO. I don’t care who you are or what you’re doing right now, you’re probably wishing you were somewhere else doing something that someone on Instagram is doing. I do too! I’d rather be back in Miami right now than deciding what bed frame to get for my new apartment at my WeWork. It’s human nature to feel jealous of certain opportunities and people, even though it’s not the healthiest feeling to have! What I realized about Coachella is that without the power of social media, this festival wouldn’t be what it is today.

Let me tell you something that most people won’t admit: the parties are so crowded, no one wants to talk to each other, everyone is using pretty hard substances and is slightly out of their mind (or at least the people I saw at the parties I went to last year) and the festival itself is so crowded and annoying to enter into that people end up skipping the festival and spending their time navigating their way to events in the middle of nowhere in Palm Springs.

When I thought about going this year, I realized there’s nothing I’d rather be doing less than Coachella. This is just my personal opinion, but being fearless and getting out of your comfort zone means you have to say no sometimes and stand your ground even if it’s easier said than done. I’d rather go to dinner and spend the day at the beach tomorrow (like I’m doing for my friend Ashley’s birthday!) than party away in Palm Springs to take cool Instagram pictures. It’s really not that easy to get cool pictures because all the cool pictures everyone wants to take so their ends up being lines at every hotel and mural in Palm Springs which makes you dehydrated and irritated by the time you get to the front of the line to snap your picture. Not.worth.it.

Moral of the story: do what makes YOU feel good, not what Instagram makes you feel. If there’s one thing I learned when I moved to LA, it’s that just because someone looks happy on Instagram in no way means they are in real life. Wouldn’t you rather be happy at home alone watching Netflix than trying to put on a certain image at a certain event?

This week on Fearless Everyday, I welcome an incredibly fearless dancer named Chelsea Hill. She has a huge following on Instagram where she dances and shows her fearlessness in all avenues of her life, from her personal life to her dancing. I came across Chelsea through a few other dancers who I’ve interviewed on my show. It was immediately apparent to me how independent and truly confident Chelsea is. When she was younger she was involved in a horrific accident that almost killed her, which is how she ended up paralyzed from the waist down and in a wheel chair. Her smile and passion to inspire others to overcome tough times is enough to have you fall in love with her instantly upon being in her presence. Thank you Chelsea for being such a #GirlBoss and showing people around the world that you can overcome ANYTHING.
